Thinly sliced, marinated beef, reminiscent of the meat market, is stir-fried with caramelized onions and bell peppers – a nod to Philadelphia's iconic flavors, reimagined with an energetic kick of gochujang and ginger. Ingredients
- 400g Thinly sliced beef (flank steak or sirloin)
- 2 tbsp Soy Sauce (for marinade)
- 1 tsp Sesame Oil (for marinade)
- 1 tbsp Cornstarch
- 2 servings (approx. 400g) Fresh Udon Noodles (cooked per package directions)
- 1, thinly sliced Large Yellow Onion
- 1 each, thinly sliced Bell Peppers (red and green for color)
- 3 cloves, minced Garlic
- 1 inch, grated Fresh Ginger
- 3 tbsp Soy Sauce (for stir-fry sauce)
- 1-2 tbsp (adjust to taste) Gochujang (Korean chili paste) or Sriracha
- 1 tbsp Brown Sugar
- 1 tbsp Rice Vinegar
- 2 tbsp Water or Beef Broth
- 3 tbsp, divided Vegetable Oil (for cooking)
- 2 Large Eggs
- 2, chopped (for garnish) Green Onions
- 1 tsp (for garnish) Toasted Sesame Seeds
Instructions
- Pat beef dry and slice thinly against the grain. In a bowl, combine beef with 2 tbsp soy sauce, 1 tsp sesame oil, and cornstarch. Mix well and let marinate for at least 15 minutes.
- Prepare the stir-fry sauce: In a small bowl, whisk together 3 tbsp soy sauce, gochujang/sriracha, brown sugar, rice vinegar, and water/broth. Set aside.
- Heat 1 tbsp vegetable oil in a large wok or skillet over high heat until smoking. Add half the marinated beef in a single layer and sear for 1-2 minutes per side until browned. Remove beef and set aside. Repeat with remaining beef, adding more oil if needed.
- Reduce heat to medium-high. Add 1 tbsp vegetable oil to the wok. Add sliced onions and bell peppers and stir-fry for 3-5 minutes until softened and slightly caramelized.
- Add minced garlic and grated ginger to the vegetables and stir-fry for 1 minute until fragrant.
- Return the cooked beef to the wok. Pour in the prepared stir-fry sauce and toss everything to coat, cooking for 1-2 minutes until the sauce thickens slightly and coats the beef and vegetables.
- Meanwhile, in a separate small skillet, heat the remaining 1 tbsp vegetable oil over medium-high heat. Crack the eggs into the pan and fry until the whites are set and the yolks are still runny, or to your preferred doneness. (One egg per serving).
- Divide the cooked udon noodles between two serving bowls. Top each with a generous portion of the beef and vegetable stir-fry. Place a fried egg on top of each bowl.
- Garnish with chopped green onions and toasted sesame seeds. Serve immediately.
