    Pat chicken pieces dry. Heat sesame oil in a large pot or Dutch oven over medium-high heat. Sear chicken until lightly browned on all sides, about 3-5 minutes. Remove chicken and set aside.

    In the same pot, add ginger slices and smashed garlic (if using) and sauté for 1 minute until fragrant.

    Add daikon radish and carrots to the pot. Sauté for 3-5 minutes, stirring occasionally, until slightly softened.
